The Muslim Quarter in Xi’an is known for its snack food. Numerous food vendors line Hui Min Jie (回民街), the major pedestrian street running through the touristy area of the Muslim Quarter.
The man pulling and stretching the dough in the video is only there to attract the eyes of passersby, so that maybe they will be drawn in and buy some food. While I stood watching him, he was eventually replaced by another young man, who repeated the pulling of the same piece of dough. A little while later, yet another young man took over.
It is eye-catching. However, I passed on buying snack food from this particular vendor. I wasn’t interested in sweet things or fried things. I wanted a chopped beef sandwich, which I found just up the street from the lads pulling the dough.
